Scotch Eggs

Ingredients
  • 4 hard-boiled eggs
  • 1 lb. ground sausage (I used Jimmy Dean Regular, but you could also use Sage or Maple)
  • 1 teaspoon green onion, thinly sliced
  • ½ teaspoon dried minced onion
  • ¼ teaspoon salt
  • ½ cup flour
  • ¾ cup Panko bread crumbs
  • 1 beaten egg
Instructions
  1. Preheat oven to 400 degrees.
  2. Start off by combining sausage, minced onion, green onion and salt in a bowl. Mix it together with your hands like a meatloaf, until all the ingredients are evenly distributed. Form into 4 patties.
  3. Next, prepare your breading station by getting flour, bread crumbs and beaten egg into 3 separate bowls.
  4. Roll a hard-boiled egg in the flour and place it on one of the sausage patties.
  5. Shape the sausage around the egg making sure it's fully enclosed.
  6. Dip your sausage covered egg in the beaten egg wash, then roll in the breadcrumbs and place on a lined baking sheet.
  7. Repeat the process with the next 3 eggs.
  8. Bake for 35-40 minutes until the sausage is fully cooked.
  9. Let cool for 5 minutes. Slice in half and serve.
