Crispy Fish with Lemon-Dill Sauce

Ingredients
  • 2 Egg Whites
  • 1 Cup Panko
  • ½ Teaspoon Paprika
  • ¾ Teaspoon Onion Powder
  • ¾ Teaspoon Garlic Powder
  • 1 lb. Sole Fillets
  • 1 Teaspoon Pepper
  • ¼ Teaspoon Salt
  • Cooking Spray
  • ¼ Cup Mayo
  • 2 Tablespoons Diced Dill Pickle
  • 1 Teaspoon Lemon Juice
  • ⅓ Teaspoon Dried Dill
  • Lemon Wedges for Garnish
Instructions
  1. Start off by combining breadcrumbs, paprika, onion powder, and garlic powder in a shallow dish.
  2. Generously salt and pepper your sole fillets.
  3. Dip them in the whisked egg whites and then in the breadcrumbs until completely coated.
  4. Place on a broiler pan and broil on high for 4 minutes on each side or until the fish is nice and flaky.
  5. While that's cooking, we're going to whip up a quick tartar sauce. Take 1-2 pickle spears and chop them up finely to equal 2 Tablespoons.
  6. In a small bowl add in the mayo, pickles, lemon juice and dill. Stir it all together until combined.
  7. Once the fish has finished baking, place on a plate with a couple of lemon wedges and a side of the lemon-dill sauce. Don't forget to squeeze a little lemon right over the fillet before eating.
