Tempeh Tacos
 
 
Ingredients
  • 1 8oz. pack of Tempeh
  • ½ Medium Onion, diced
  • 1 cup Mushrooms, sliced
  • 1 Tablespoon Olive Oil
  • ½ Teaspoon Dried oregano
  • ½ Teaspoon Paprika
  • ¼ Teaspoon Thyme
  • ¼ Teaspoon Cumin
  • Pinch of Cayenne
  • 1½ Tablespoons Tamari or Soy Sauce
  • Head of Butter Lettuce
  • Guacamole or Salsa as a condiment
Instructions
  1. In a skillet over medium heat, start by sautéing the onions and mushrooms in olive oil for 5-7 minutes until soft and onions are translucent.
  2. Mix together some oregano, paprika, thyme and cumin and pinch of cayenne. You could also use a tablespoon of taco seasoning.
  3. Once onions and mushrooms are soft, add in tempeh, seasonings and a little tamari or soy sauce. Break the tempeh up with wooden spoon. Cook 5 minutes until the tempeh warms through and crumbles.
  4. Next, get out your gorgeous butter lettuce and pick off a few leaves.
  5. Place the tempeh mixture right on top of the lettuce leaves. You can top with guacamole and salsa if you'd like.
  6. Serve Immediately.
