Apple Banana Oat Muffins

Ingredients
  • 2 cups oats
  • ½ cup chopped walnuts
  • 2 tablespoons chia seeds
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • 2 eggs plus 1 egg white
  • ¼ cup vanilla yogurt
  • ½ cup apple juice
  • 4 tablespoons coconut oil
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon vanilla extract
  • ¼ cup honey
  • 2 apples
  • 2 ripe bananas
Instructions
  1. Pre-heat oven to 350 degrees.
  2. Pulse oats in a food processor. Continue pulsing until the oats resemble a flour like texture.
  3. Mix the ground oats, walnuts, chia seeds, baking powder and baking soda together in a bowl.
  4. Beat the whole eggs and egg white in a separate bowl. Add in the yogurt and apple juice. Stir to combine.
  5. In a small sauce pan, melt the coconut oil, cinnamon, vanilla extract and honey until it reaches a syrup-like consistency.
  6. While that’s going on mash your bananas, and chop up your apples into small pieces.
  7. Add the egg mixture to the oat mixture and stir together. Next add in the coconut oil syrup, apples and bananas and mix well.
  8. Pour the batter into muffin tins and bake for 25 minutes or until inserted toothpick comes out clean.
  9. Let cool slightly before serving.
