Apple Banana Oat Muffins
- 2 cups oats
- ½ cup chopped walnuts
- 2 tablespoons chia seeds
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- 2 eggs plus 1 egg white
- ¼ cup vanilla yogurt
- ½ cup apple juice
- 4 tablespoons coconut oil
- 1½ teaspoons ground cinnamon
- ½ teaspoon vanilla extract
- ¼ cup honey
- 2 apples
- 2 ripe bananas
- Pre-heat oven to 350 degrees.
- Pulse oats in a food processor. Continue pulsing until the oats resemble a flour like texture.
- Mix the ground oats, walnuts, chia seeds, baking powder and baking soda together in a bowl.
- Beat the whole eggs and egg white in a separate bowl. Add in the yogurt and apple juice. Stir to combine.
- In a small sauce pan, melt the coconut oil, cinnamon, vanilla extract and honey until it reaches a syrup-like consistency.
- While that’s going on mash your bananas, and chop up your apples into small pieces.
- Add the egg mixture to the oat mixture and stir together. Next add in the coconut oil syrup, apples and bananas and mix well.
- Pour the batter into muffin tins and bake for 25 minutes or until inserted toothpick comes out clean.
- Let cool slightly before serving.
