Pound out your chicken breasts in a zip-top bag to about ½" thickness.
Combine lime juice, cilantro, garlic, honey, olive oil, salt and pepper in a small bowl and give a quick mix.
Pour your marinade into the zip-top bag and pop in the fridge for at least 30 minutes or overnight.
After your marination period, preheat your grill to medium high heat. Lay chicken on the grill and cook for 4-6 minutes on each side until it's no longer pink and fully cooked through.
Get your rice, beans and tortillas and feast!
