Roasted Carrots

Ingredients
  • 12 carrots
  • 3 tablespoons extra virgin olive oil
  • 1¼ teaspoons kosher salt
  • ½ teaspoons freshly ground black pepper
  • ½ onion, diced
Instructions
  1. Preheat the oven to 400 degrees F.
  2. Clean and peel the carrots. Cut off the tops and bottoms.
  3. Slice carrots into 1½" pieces on the bias. Place on a sheet pan and drizzle with olive oil and add the salt and pepper. Sprinkle with chopped onion. Give them a quick toss with your hands.
  4. Roast in the oven for 20 minutes, until slightly browned and tender.
