Spicy Turkey Burgers with Blue Cheese Gravy and Fries

  • For Fries:
  • 5 big Idaho potatoes, cut into wedges
  • 2 tablespoons extra virgin olive oil
  • ½ Teaspoon Salt
  • 2 Teaspoons Black and Bluesy seasoning
  • For Burgers:
  • 2 tablespoons extra virgin olive oil
  • 2 pounds ground turkey
  • 2 Tablespoons Black and Bluesy seasoning
  • 1 Teaspoon kosher salt
  • ½ cup chopped chives, plus more for garnish
  • 2 cloves garlic, grated
  • For Gravy:
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 3 cups whole milk
  • Salt and Pepper to taste
  • 2 cups blue cheese
  • 4 rolls or hamburger buns
Instructions
  1. For Fries: Pre-heat the oven to 450ºF.
  2. Place potato wedges on sheet pan and drizzle with olive oil. Sprinkle on salt and Black n Bluesy seasoning. Toss to coat. Bake for 40-45 minutes until fork tender and crispy.
  3. For Burgers: In a large bowl add ground turkey, Black n Bluesy seasoning, salt, chives and grated garlic. Mix it all together with your hands and form into 4 patties.
  4. Heat up the olive oil in a pan over medium-high heat and add in the burgers. Cook for 5-7 minutes on each side until cooked through.
  5. Toast the buns in a skillet or toaster and set aside.
  6. For Gravy: In another skillet, melt butter over medium-high heat. Sprinkle in flour and whisk together to make a roux. Let it bubble for about a minute to cook out that raw flour flavor. Pour in the milk and whisk. Bring to a boil to thicken and remove from heat. Salt and pepper to taste. Stir the blue cheese into the gravy until combined.
  7. Place the turkey burger and pop it on a toasty bun. Add some chopped chives right on top of the burger and serve alongside a cup of blue cheese gravy and fries.
