Banana Bread

Ingredients
  • ½ cup granulated sugar
  • ½ cup dark brown sugar
  • 1 stick unsalted butter (8 tablespoons) at room temperature
  • 2 eggs
  • 3 ripe bananas
  • 1 tablespoon whole milk
  • 1 teaspoon ground cinnamon
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
Instructions
  1. Preheat the oven to 325 degrees. Butter a loaf pan.
  2. Cream together the butter and both sugars in a stand mixer until light and fluffy. Add in one egg at a time, incorporating fully before adding the second.
  3. Peel your bananas, put them in a medium bowl and mash with a fork. Add the milk and cinnamon in the mashed bananas and mix together. In a separate bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
  4. Add the banana mixture to the sugar and butter and mix until combined. Add the dry ingredients in 2 batches, incorporating fully before adding in the second batch. Mix until the flour disappears and you have a smooth batter.
  5. Pour batter into a greased loaf pan. Bake for 1 hour or until an inserted toothpick comes out clean.
  6. Let cool on wire rack for 15 minutes then remove bread from pan. Slice and serve!
