Friday is here, rejoice! Today is the last recipe for beans from Alton Brown’s Cool Beans Episode. I know you’re all sad, but we’ll get through it together đ Today we have classic baked beans. This was my first time ever making them, I have absolutely no idea what took me so long. I just adored these beans. They were sweet, smoky and had the perfect little spicy kick. This will be my go to baked beans recipe for all the summer BBQ’s in our future. It does take some time, so plan on doing this on a lazy Sunday when you’ll be lounging around the house for a good 6-8 hours.
This recipe requires soaking beans, so you’ll have to prepare a day in advance. Soak the beans at room temperature overnight for 8-12 hours. If you soak your beans and aren’t able to use them immediately, seal them in a zip top bag and pop in the fridge for up to 4 days.  Thank you Christopher Kimball!
When your beans are soaked and you’re ready to use them, add bacon, onion, and jalapenos to a dutch oven over medium heat. Cook until the bacon fat has rendered and softens the onions, about 5-7 minutes.
Add in tomato paste, brown sugar and molasses.
 Stir to combine.
Add in drained, pre-soaked beans and 4 cups of chicken broth. Bring to a boil and stir in cayenne, black pepper and salt. Cover with lid and cook for 6-8 hours in the oven.
Enjoy!
- 1 pound dried Great Northern beans
- 12 oz. bacon, chopped
- 1 yellow onion, chopped
- 2 jalapenos, chopped
- ¼ cup tomato paste
- ¼ cup brown sugar
- ¼ cup molasses
- 4 cups chicken broth
- ¼ teaspoon cayenne pepper
- 1 teaspoon black pepper
- 2 teaspoons salt
- Soak beans in enough water to completely cover them for 8-12 hours. If you aren't able to use them immediately, seal them in a zip top bag and pop in the fridge for up to 4 days.
- Pre-heat oven to 250 degrees F.
- Cook bacon, onion, and jalapenos in a dutch oven over medium heat. Cook until the bacon fat has rendered and softens the onions, about 5-7 minutes.
- Add in tomato paste, brown sugar and molasses. Stir to combine.
- Add in drained, pre-soaked beans and 4 cups of chicken broth.

There is nothing like good, zingy home-made baked beans. It’s true, they take more time than effort, and are so worth it. Thanks for sharing with us at Fiesta Friday.

Looks very delicious Sarah, great post! My 20 month old boy just took up a liking to baked beans (Boston’s Original Baked Beans, which are very good even though they’re canned), so I thought about whipping him up some homemade ones in the near future. Might have to give this recipe a try. Thank you for posting!
