Eating healthy doesn’t have to be boring. I think these muffins are a testament to that. Sure, they don’t taste like those jumbo sized, sugar-laden kinds you get at the coffee shop, but I happen to think they’re darn tasty. These muffins are made without refined sugars, but they’re also nutrient dense and full of fiber. They use ground oats instead of flour, and you could use gluten-free oats making the muffins completely free of gluten if you have a sensitivity. It also doesn’t hurt that it’s Miranda Kerr’s recipe. Maybe if I eat enough of these, I’ll look just like her 😉 It’s the perfect guilt-free breakfast or snack.
Start off by grinding oats in a food processor.
Continue pulsing until the oats resemble a flour-like texture.
Mix the ground oats, walnuts, chia seeds, baking powder and baking soda together in a bowl.
Beat the whole eggs and egg white in a separate bowl. Then add in the yogurt and apple juice. Stir to combine.
In a small sauce pan, melt the coconut oil, cinnamon, vanilla bean powder and honey until it reaches a syrup-like consistency.
While that’s going on mash your bananas….
…and cut up your apples.
Add the egg mixture to the oat mixture and stir together.
Next add in the coconut oil syrup…
…apples and bananas and mix well.
Pour the batter into muffin tins and bake for 25 minutes.
Let cool for about 15 minutes.
Enjoy!
These freeze really well, so if you go on a muffin making spree, freeze away.

- 2 ripe bananas

- While that’s going on mash your bananas, and chop up your apples into small pieces.
- Add the egg mixture to the oat mixture and stir together. Next add in the coconut oil syrup, apples and bananas and mix well.
- Pour the batter into muffin tins and bake for 25 minutes or until inserted toothpick comes out clean.
- Let cool slightly before serving.

Definitely going to try this recipe out Sarah. My wife has been pestering (pretend there is positive connotation there lol) about coming up with a healthy, easy grab and go breakfast for her.
