Friday dance time friends! This week has been HOT (is summer over yet?) and super busy. I mean the kind of busy where when I leave the house, I have so many things running through my head, that I have call a friend to go over to my house to make sure I shut my garage door on my way out. Can anyone relate?
I’m a crazy organized person (emphasis on crazy) who LOVES lists, and today I’ve FINALLY crossed off all my items. So you know what that means, my Friday dance is like the running man on steroids. I know my friends can actually envision me doing that. I happen to have some mad skills 😉
Things that made this week better:
1. An impromptu date night, that was much-needed, at a favorite restaurant of ours last night
2. Vogue’s September issue is out today
3. This sauce!
I am very picky about sauces, to a point of being borderline obnoxious. This sauce blew away every expectation that I had for it. It starts off with a good base (you can’t go wrong with a jar of San Marzano marinara), but when you doctor a simple delicious sauce up with extra onions, garlic, sausage, arugula, mascarpone and Parmesan, it takes it to a whole new level. I could hardly eat it because I wouldn’t stop talking about how great it was. It had the slightest spice from the sausage and arugula, creaminess from the mascarpone and a salty bite from the Parmesan…in other words, a party in my mouth.
I love the idea of using it as a baked potato topping instead of pasta. It’s a nice change of pace. I have so many ideas for this sauce in the future. You must try this Baked Potato with Sausage and Arugula Sauce as soon as humanly possible. Sorry to sound bossy, but MAKE IT NOW!
Heat olive oil in a skillet over medium-high heat. Add onions, salt and pepper and cook onions until they start to soften, about 5 minutes.
Add in garlic. All good things in life start off with onions and garlic.
Add the sausage and crumble with the back of a wooden spoon. Continue cooking until sausage is browned and cooked through.
Grab your favorite jarred marinara sauce.
Pour the sauce right over the top of the sausage mixture.
Then, add in the arugula. Bring to a boil and simmer for 3 minutes, until arugula has completely wilted.
And now for the magic, spoon in the mascarpone cheese and stir until it melts and creates the most delicious creamy sauce.
Finally, sprinkle on some Parmesan cheese. Stir in the cheese and season with salt and pepper IF needed.
Grab your baked potato and cut a slit in the top.
Press both ends of the potato together until it pops open.
Spoon on a good helping of the sausage and arugula sauce. Sprinkle with a little fresh parsley.
