Baking season is here! I may have gotten a head start over the weekend 🙂 Fall is my favorite season. I’ve already started putting up fall decor despite the husband telling me I must wait until the actual Fall Equinox, to which I reply Phooey!
I love the way fall baking fills your house with the most incredible aromas! There’s nothing that makes your home more inviting than the scent of fresh-baked goods. Banana Bread is one of my favorites. The smell, the moist texture, the subtle banana flavor and sweetness. A nice warm slice with a generous slather of honey butter is in my top 10 favorite bites.
This recipe is super simple. You can always add a 1/2 cup of chopped walnuts if you like. I sometimes do, it just depends on what’s in my pantry and what I’m in the mood for. Trust me, either way, you can’t go wrong.
Start by creaming together the butter and sugar in a stand mixer until light and fluffy.
Add in one egg at a time, incorporating fully before adding the second.
Peel your bananas and put them in a medium bowl. I made a double batch, one to freeze for later 🙂
Mash them up real good. You want to make sure your bananas are ripe. Otherwise, it will throw off the taste and texture of the bread.
Add the milk and cinnamon in the mashed bananas and mix together.
In a separate bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
Add the banana mixture to the sugar and butter and mix until combined.
Add the dry ingredients in 2 batches, incorporating fully before adding in the second batch.
Mix until the flour disappears and you have a smooth batter.
Pour batter into a greased loaf pan.
Bake at 325 for 1 hour, or until an inserted toothpick comes out clean. Let cool on wire rack for 15 minutes then remove bread from pan. Slice and serve!

Great minds think alike. I too baked a banana walnut loaf this week. There’s nothing quite like the aroma of freshly baked fruit breads with those warm, earthy spices. It does freeze well too. I seem to frequently make banana bread or muffins as there are always bananas on my counter that are not so good for eating fresh. Try roasting them sometime 🙂
