Cheesy Meat Loaf Minis

Meat loaf is one of my all-time favorite comfort foods. I don’t know why it gets a bad rap. Perhaps it’s the name, Meat+Loaf doesn’t sound very appealing, but I still love it so.  Meat loaf is the heart and soul of the Midwest, so we ate a lot of it. I guess I was lucky growing up and never had a bad loaf, I always looked forward to meat loaf dinners. When you add a little cheese to the mix, it just makes it that much better. I usually make one large loaf, but I saw a recipe for Meat Loaf Minis and couldn’t resist. They’re adorable, and you don’t have to share, something I do not like to do when it comes to food 😉

These Cheesy Meat Loaf Minis are so delicious! They’re packed full of flavor from the cheese and the herbs and have a slight tang from the horseradish and ketchup. It all comes together in the perfect marriage of meaty, cheesy goodness.

Start off adding ketchup, parsley, Parmesan, horseradish, Dijon, oregano, salt, pepper and white cheddar to a large bowl.

 Next add in the ground beef and egg.

 Using your #1 kitchen tool, your hands, mix it all together.

 Put the breadcrumbs in a dry skillet and heat on low until they start to brown up a little, about 2 minutes. Set them aside.

 Next, sauté the onions and garlic in a little cooking spray until they just start to soften, about 3-5 minutes.

 Now you can add the onions, garlic and breadcrumbs to the ground beef and mix it all together.

 Form in to 4 loaves.

 Spread a little ketchup on top of each one and bake for 25 minutes.

Look at all that delicious gooey cheese! Be sure to let them sit 5 minutes before serving.

Ingredients
  • ⅓ cup Panko Breadcrumbs
  • Cooking spray
  • ¾ cup chopped onion
  • 2 garlic cloves, chopped
  • ⅓ cup ketchup, divided
  • ¼ cup chopped fresh parsley
  • 2 tablespoons grated Parmesan cheese
  • 2½ teaspoons prepared horseradish
  • 2½ teaspoons Dijon mustard
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 3 ounces white cheddar cheese, diced
  • 1 pound ground beef
  • 1 large egg
Instructions
  1. Preheat oven to 425 degrees.
  2. Add parsley, Parmesan, horseradish, Dijon, oregano, salt, pepper, white cheddar and half of the ketchup to a large bowl.
  3. Next add in ground beef and egg. Using your #1 kitchen tool, your hands, mix it all together.
  4. Put the breadcrumbs in a dry skillet and heat on low until they start to brown up a little, about 2 minutes. Set aside.
  5. Next, spray a skillet with cooking spray and sauté the onions and garlic until they just start to soften, about 3-5 minutes.
  6. Add the onions, garlic and breadcrumbs to the ground beef and mix it all together.
  7. Form in to 4 loaves and place on a sheet pan lined with aluminum foil.
  8. Spread the remaining ketchup on top of each loaf and bake for 25 minutes.
  9. Let the loaves rest 5 minutes before serving.

    I to wonder why Meatloaf has a bad rap? It is an easy meal especially for a family. Leftover meatloaf sandwiches are yum too for a quick lunch. We have it at least once a month with mashed (real) potatoes/gravy, green bean casserole. My gang calls it the “Cracker Barrel” Supper?! Looks Yum in mini form. Nice job my BBFF OXOXOXOXOX
