Happy Tuesday! I hope everyone had a fabulous weekend! I spent most of mine reading through a bunch of cookbooks and playing with my new Apple Watch! I’m completely obsessed! 😀
We’re not big fish eaters in our house, but once in a while we find a recipe we really enjoy. Our favorite types of fish are Sole and Orange Roughy. Trader Joe’s always has the best selection of wild caught frozen fish. I grabbed a pound of the Sole and started looking for some recipes. I knew I wanted baked fish, but I wanted it crispy. This one fit the bill perfectly. Seasoned panko is the magic ingredient, making this fish nice and crispy while broiling in the oven. Serve with a side of homemade tartar sauce and a few lemon wedges and a delicious dinner awaits you.
You can use this recipe with any white fish you like. We loved this dish, and know you will too!
Start off by combining breadcrumbs, paprika, onion powder, and garlic powder in a shallow dish.
Generously salt and pepper your sole fillets.
Dip them in the whisked egg whites and then in the breadcrumbs until completely coated.
Place on a broiler pan and broil on high for 4 minutes on each side or until the fish is nice and flaky.
While that’s cooking, we’re going to whip up a quick tartar sauce. Take 1-2 pickle spears and chop them up finely.
Just like this.
In a small bowl add in the mayo.
Next, add in the pickles, lemon juice and dill.
Stir it all together until combined.
Once the fish has finished baking, place on a plate with a couple of lemon wedges and a side of the lemon-dill sauce. Don’t forget to squeeze a little lemon right over the fillet before eating.
