Happy Friday! I’m so happy it’s Friday I cannot tell you. Every time I think I’ve kicked this illness to the curb, it keeps pulling me back in. I see a weekend full of hot toddies and the possible consumption of whole heads of garlic in my future. I know, try not to be too jealous. But, enough about me, let’s get to the food!
I first fell in love with soy eggs when my husband took me to an authentic ramen restaurant. We’re not talking about ramen from a package, but fresh ramen noodles swimming in hot broth that’s been cooking for days. I’m pretty much OBSESSED with our local ramen joint.
Ramen eggs are soft-boiled and marinated in a combination of usually soy and mirin (similar to saké, but with a lower alcohol content and higher sugar content). They slice them in half and serve them right in the hot ramen broth. I’m drooling just thinking about it. When I saw these soy marinated deviled eggs over at Nutmeg Nanny, it reminded me so much of my beloved ramen eggs, that I knew I had to give them a try.
They were everything I hoped they’d be and more. These deviled eggs are salty, spicy and thoroughly delicious. Just make sure you marinate no longer than 12 hours, or things may get a little too salty.
Start off by slicing 6 hard-boiled eggs in half.
Scoop out the yolks and mix together with mayo, mustard, Sriracha, salt and pepper until smooth. Cover in the refrigerator until ready to use.
Pour soy sauce in an 8 x 8 pan. Marinate 6 hours on one side, and then flip and marinate another 6 hours on the other side.
Scoop the egg yolk mixture into the marinated egg white halves. Place eggs on a platter, drizzle with Sriracha and sprinkle with sliced green onions.
Try to share. I did not eat this entire plate. No sir, I did not!

What an interesting recipe for deviled eggs – I make them but don’t eat many but these I would have to try. Marinating the egg whites in soy sauce and then the inside with sriracha – yum 🙂
