Good Tuesday morning friends and Happy Cinco de Mayo! Today I’ve got a fun and tasty recipe for you today. It’s healthy, fresh and delicious.
How many of you out there are familiar with Tempeh? If you’re not here’s a quick overview.
Tempeh is a fermented soy product that comes in a patty form. It may look a little strange, but don’t be afraid. It’s made with whole soybeans with very little processing, unlike tofu. It’s high in protein, so it’s an excellent substitute for meat. You’ll find it in the refrigerator section next to the tofu in your grocery store. I’m seeing it pretty much everywhere nowadays. My favorite is Trader Joe’s 3 Grain Tempeh.
The first time I was introduced to tempeh was while reading one of my favorite blogs, The Fitnessista. She made taco meat out of it! I immediately ran to the store and picked up the ingredients and made it that night. I could not believe how much I liked it. It honestly tasted like taco meat! It’s on the regular rotation of dinners in my house. Throwing it on top of butter lettuce and rolling into tacos is one of my favorite summer dishes.
If you’re looking for a good meatless meal, look no further and make this today! And for those of you, who just want meat, go ahead and substitute the tempeh with a 1/2 pound of ground beef, chicken or turkey. I’ve tried them all and you can’t go wrong with any of them 🙂
In a skillet over medium heat, start by sautéing the onions…
…and mushrooms in a little olive oil.
Grab your tempeh.
This is what it looks like. Don’t be afraid!
Mix together some oregano, paprika, thyme and cumin and pinch of cayenne. You could also use 2 tablespoons of taco seasoning.
Once onions and mushrooms are soft, add in tempeh, seasonings and a little tamari or soy sauce. Break the tempeh up with wooden spoon. Cook 5 minutes until the tempeh warms through and crumbles.
Next, get out your gorgeous butter lettuce and pick off a few leaves.
Place the tempeh mixture right on top of the lettuce leaves. You can top with guacamole and salsa if you’d like. Serve immediately.
- 1 8oz. pack of Tempeh
- ½ Medium Onion, diced
- 1 cup Mushrooms, sliced
- 1 Tablespoon Olive Oil

I’ve never had tempeh before, but it looks very healthy and I guess it can be seasoned to whatever taste you like? My husband and I are doing meatless Mondays, so I’m always on the lookout for delicious non-meat food:)
