If you love chocolate, stop everything you’re doing a pay attention. I made these a long time ago for my chocoholic husband, and he requests I make them multiple times a year. I’ve made these bars so many times, I could do it blindfolded.

I decided to bring these over to my Mom’s house for Mother’s Day dinner. My dad grilled up some delicious steaks, potatoes and asparagus, so I brought the dessert. We enjoyed all the amazing food outside on the patio and had a great time!

These Chocolate Mascarpone Toffee bars are very simple to make because you doctor up some basic store-bought ingredients. Everyone I’ve ever made them for LOVES these bars! The mascarpone cheese gives it this lovely light and smooth texture that melts in your mouth. This dessert knocks it out of the park every time. You can make it ahead of time and store it in the fridge. I’m a serial pre-planner, so my OCD loves this 🙂

I promise, this will be one of your go to favorite desserts. Let me show you how easy they are to make.

Chocolate Mascarpone Toffee Bars - 1

Get an 11″ x 7″ pan and spray with non-stick spray. If you can’t find this size, you could always use an 8″x 8″. You’re cooking time will be a little longer, so adjust as necessary. I always get a disposable for this recipe since I’m usually taking it on the go. Cut a piece of parchment paper and lay across pan allowing the edges to overhang. This is going to help you easily pull the bars out and cut them. You’ll thank me later for this step.

Chop up the Skor bars. You can use Heath bars, but I’m partial to Skor.

Get your sugar cookie dough. You can make your own, but I like to simplify things and go with good old Pillsbury.

Put the cookie dough in a bowl.

Add in half the Skor bars and some vanilla extract. I’m still obsessing over how much better the homemade stuff is! Mix it all together.

Plop that delicious cookie dough into your pan.

Wet your fingers. Don’t skip this step, actually wet your fingers and spread it out evenly in the pan. Wetting your fingers will help prevent the cookie dough from sticking to you.

Prick the dough with a fork.

Do it all over the surface of the dough. Bake for 12-15 minutes until the crust is lightly browned.

While that’s baking, add your chocolate chips and a little vegetable oil to a bowl. The better quality chocolate you use, the better the dish will taste. Ghirardelli, as you know by now, is my favorite. The vegetable oil is going to make the chocolate nice and glossy after we melt it.

Pop it in the microwave for 30 seconds at a time, stirring each time.

Repeat this until it’s totally melted. You could also do this over a double boiler.

Let the baked cookie dough cool completely.

After the chocolate has cooled for 5 minutes, add in the mascarpone cheese. If you let it cool too much, just warm it up again. You want the chocolate to melt the mascarpone while whisking.

Whisk until completely smooth.

Spread the chocolate mixture right over the cookie dough. See how glossy and beautiful that is!

Finish it off by sprinkling the rest of the chopped Skor bars over the top.

Refrigerate for at least 2 hours. Pick it up by the parchment paper to remove it from the pan and peel it off. Cut into pieces and serve at room temperature. If it’s a little warm outside, you’ll only need a few minutes for it to come to temperature.

Eat. Faint. Repeat.

  • 1 lb. Refrigerated Cookie Dough ( I used Pillsbury)
  • 3 Chocolate-Toffee Candy Bars (I used Skor)
  • ½ Teaspoon Vanilla Extract
  • 1 Cup Semi-Sweet Chocolate Chips (I used Ghirardelli)
  • 1 Teaspoon Vegetable Oil
  • 1 Cup Mascarpone Cheese, at room temperature
  • Non-Stick Cooking Spray
Instructions

  4. Put the cookie dough in a bowl. Add in half of the chopped Skor bars and vanilla extract. Mix it all together.

  6. Prick the dough's surface with a fork several times.
  7. Bake for 12-15 minutes until the crust is lightly browned. Let the baked cookie dough cool completely.
  8. Add your chocolate chips and a little vegetable oil to a bowl. Pop it in the microwave for 30 seconds at a time, stirring each time until completely melted. Let cool for 5 minutes. Add in the mascarpone cheese and whisk until completely smooth.
  9. Spread the chocolate mixture right over the cooled cookie dough.
  10. Finish it off by sprinkling the rest of the chopped Chocolate-Toffee bars over the top.
  11. Refrigerate for at least 2 hours. Pick it up by the parchment paper to remove it from the pan and peel it off. Cut into pieces and serve at room temperature.
