Homemade Mayonnaise

August 25, 2015 By Sarah 'n Spice 14 Comments

Homemade Mayonnaise - 3

I love making homemade condiments and spices. They’re so simple and you usually already have the ingredients on hand. They end up tasting much better than the store-bought counterpart. I enjoy making my own taco seasoning, onion soup mix, vanilla extract, and blue cheese dressing. I can now add Homemade Mayonnaise to the mix. It’s so much lighter and brighter than the tub you get at the grocery store. The great thing about making it at home is you can add your own little twist on it. You could add chopped garlic, red pepper flakes or even herbs to make a really fun and tasty version that’s perfectly tailored to you. It only takes 5 minutes to whip up and you’ll be happy you did!

Homemade Mayonnaise - 1

Start off by adding egg yolks, lemon juice and Dijon mustard to a blender.

Homemade Mayonnaise - 2

Mix until combined. Turn the blender on medium-low speed, and slowly add in the vegetable oil until the mixture emulsifies and looks like mayo. Season with salt and pepper.

Homemade Mayonnaise - 3

Pop into an air tight container and store in the fridge for up to a week.

Ingredients
  • 2 large egg yolks (Because we're using raw eggs, make sure you use pasteurized eggs. This is an all-natural process where eggs are gently heated to eliminate bacteria.)
  • 1 teaspoon Dijon mustard
  • 4 teaspoons fresh lemon juice
  • 1 cup vegetable oil
  • Kosher salt and freshly ground black pepper
Instructions
  1. Start off by adding egg yolks, lemon juice and Dijon mustard to a blender. Mix together until combined.
  2. Turn the blender on medium-low speed, and slowly add in the vegetable oil until the mixture emulsifies and looks like mayo.
  3. Season with salt and pepper.
  4. Pop into an air tight container and store in the fridge for up to a week.

I’ve made my own mayo before. It is still amazing to me how it just magically forms… I like your inclusion of Dijon!

I have been meaning to try this. John thinks he doesn’t like mayo, but I know he would like the homemade version. Great pictures and instructions!

I’ve been actually dying to make my own condiments. And what better place to start then by making this mayo recipe. I still have yet to make the onion soup mix, and that has to definitely happen soon. Love this Sarah.
